These slurp-worthy noodles coated in scrumptious peanut butter sauce are the perfect comfort food or late night snack. Able to be made in a jiffy, this quick take on traditional Chinese ban mian peanut noodles are guaranteed to fulfill your cravings and requires less than ten minutes to make.
INGREDIENTS
100g of rice noodles
Three tablespoons of smooth peanut butter
Two tablespoons of soy sauce
Two teaspoons of vegetable oil (we recommend sesame or olive, but any will do)
One teaspoon of vinegar
A pinch of pepper to taste
Green onion or leek for garnish
INSTRUCTIONS
1. Bring a pot of water to a boil and cook the noodles according to package directions (for rice noodles, this is usually 2.5 – 3 minutes).
2. While the noodles are cooking, add your peanut butter, soy sauce, vinegar, vegetable oil and pepper in a bowl. Mix until combined. Keep stirring until smooth.
3. Once your noodles are cooked, add them in thirds to your sauce, stirring in between each portion.
4. Garnish with chopped green onion or leek and enjoy!
