These fresh fruit parfaits pair seamlessly with Cambridge’s warm spring weather!
Spring is coming, and there is no better time for fruits or for friends! A few years ago, I took a gourmet cooking class at the Cambridge School of Culinary Arts; on the second day of class, we learned a simple and healthy recipe for making fruit parfaits. Each batch yields 12 servings, making it the perfect dish for a group of friends as well as a great way to enjoy fresh fruit!
Ingredients (12 servings):
1 large banana, sliced
1 quart fresh strawberries, sliced thin
1 pineapple, medium diced
2 pints blueberries
6 cups nonfat vanilla yogurt
3-4 cups granola
12 fresh strawberries (for garnish)
24 blueberries (for garnish)
12 mint leaves (for garnish)
Instructions:
- In a large bowl, toss banana, strawberry slices, pineapple, and blueberries.
- Take out 12 glasses (preferably matching)
- Pour granola evenly into the glasses.
- Add a layer of fruit mixture to each glass.
- Finally, add a layer of yogurt.
- Top each parfait with 1 strawberry, 2 blueberries, and a mint leaf.
- Enjoy!
