There’s nothing cozier than baking cookies in the winter months! It is especially fun to make seasonal recipes in celebration of the holidays. Italian Christmas cookies are one of these many festive treats, and Kristyn Merkley has a very delicious recipe for them.
Ingredients (1 batch):
Cookies
2 large eggs
6 tbsps vegetable oil
½ cup granulated sugar
1 tsp almond extract
2 cups all-purpose flour
2 tsps baking powder
Dash of cinnamon
Glaze
2 cups powdered sugar
1 tsp almond extract
Pinch of salt
3 tbsps heavy whipping cream
Red and green sprinkles
Instructions:
- In a large bowl, whisk together eggs, oil, and almond extract.
- In a separate bowl, mix granulated sugar, flour, baking powder, and cinnamon. Combine with the previous mixture and stir.
- Chill dough for at least an hour.
- Scoop out small balls of cookie dough with a scooper; place on a parchment-lined baking sheet.
- Bake at 350 degrees until the tops set, about 8-10 minutes. Let it cool.
- For the glaze, whisk powdered sugar, almond extract, pinch of salt, and heavy cream in a small bowl until smooth.
- Dip the tops of the cookies in glaze, and top with sprinkles. Enjoy!
