As autumn finally drives away the scorchingly hot summer sun and brings about colder winds, anything warm, sweet, and nutty is the perfect treat for the season of festivities and turning leaves. This banana bread recipe is great for a comforting and cozy snack to enjoy with family and friends, while also making use of dangerously brown bananas to save a couple dollars.
INGREDIENTS
3 extremely ripe, mashed bananas (around 1 ½ cups or 11g)
½ cup plain Greek yogurt
1 teaspoon baking soda
½ teaspoon salt (if butter is not salted)
1 ⅓ cup all-purpose flour
½ cup softened butter
½ cup brown sugar
½ cup granulated sugar
½ teaspoon vanilla extract
2 large eggs
INSTRUCTIONS
- Preheat oven to 350°F. Grease a 9×5 inch loaf pan, or use parchment paper.
- In a bowl, mix together all of your dry ingredients excluding your sugar.
- Mix the sugar and butter in a separate, large bowl; don’t overmix the butter.
- Add in the bananas, eggs, vanilla extract, and all of the wet ingredients.
- Fold the dry ingredients into the wet ingredients and, if desired, fold in nuts or chocolate chips.
- Pour the batter into the greased 9×5 inch loaf pan and cook for around 40 minutes.
- Check the banana bread using a toothpick or chopstick periodically. When it comes out clean, it’s ready!
(Sliced almonds, walnuts, or chocolate chips are a great addition to your banana bread!)
*If you don’t have any super-ripe bananas at hand, you can stick
them into the oven for 5-10 minutes at 350°F this will soften them up
